Freezing bread: how long does it last and how should you store it?
Bread freezes really well: fresh, airtight and ideally sliced, it keeps good quality for up to about 3 months in the freezer. Frozen slices go straight into the toaster. In the fridge, on the other hand, bread goes stale faster. If there is mould, throw out the whole loaf. Do not cut it off.
Storing bread: guide times
| Bread and place | Guide time | What to watch |
|---|---|---|
| White bread, bread bin | up to about 2 days | Dry, dark, at room temperature |
| Mixed wheat and rye bread | about 2–4 days | Store cut side down |
| Rye bread | about 4–6 days | In a bread bin, not in a plastic bag somewhere warm |
| Wholegrain bread | about 7–9 days | Still check regularly for mould |
| Freezer, -18 °C (0 °F) | up to about 3 months | Airtight, labelled with the date |
| Thawed bread | best eaten within 1 day | Do not refreeze |
| Fridge | not recommended | Goes stale faster |
How to freeze bread properly
- Freeze it fresh: ideally on the day you buy it. Old bread tends to crumble after thawing.
- Slice or portion it: so you only take out what you need.
- Wrap it airtight: freezer bag, air pressed out, sealed well. Paper bags are not suitable.
- Label it: write the date on the bag so you can keep track of the 3 months.
- Let home-baked bread cool completely first, or ice will form in the bag.
Thawing: toaster, oven or room temperature
- Slices: straight from frozen into the toaster. Nothing is quicker.
- Whole loaf: thaw in its bag at room temperature, then a few minutes in the oven for a crisp crust.
- Straight into the oven: at about 180 °C (350 °F), slices for about 5–10 minutes, a whole loaf for about 20 minutes.
- Microwave: often makes bread rubbery. If you use it, only briefly and on low power.
Can you freeze bread twice?
Better not. It is usually not a big health issue as long as the bread looks, smells and tastes normal. But quality drops with every freeze: the crust comes away, the crumb turns rubbery and then dries out fast. Condensation during thawing can also encourage mould.
So freeze bread in slices, take out only what you need, and eat thawed bread within about a day.
Why bread does not belong in the fridge
At fridge temperature, bread goes stale faster and dries out. A bread bin or crock is better, ideally clay or ceramic, kept dry and dark at room temperature. Put the loaf in cut side down and wipe the container with vinegar water about once a week.
One exception: on very hot, humid days, white bread can stay mould-free longer in the fridge. Anything you will not eat soon is still better off in the freezer.
Mould: always throw out the whole loaf
- If you see white, green or bluish spots, the whole loaf goes in the bin, even if it is just one small patch.
- Do not cut it off: bread is soft and porous. Mould threads can spread invisibly through the whole loaf.
- Rolls in a pack: if one is mouldy, throw out the whole pack.
- Then clean the bread bin thoroughly with vinegar water.
- Only dry, stale bread without mould is not waste: turn it into toast, croutons, breadcrumbs or French toast.
Frequently asked questions
How long can you freeze bread?
Well wrapped, up to about 3 months in good quality. After that it often gets dry and loses flavour. Write the date on the bag.
Can you freeze bread twice?
Better not. If it is in perfect condition it is usually not a health risk, but crust and crumb suffer a lot, and condensation can encourage mould. Freeze bread in slices so you never thaw more than you need.
Can you cut mould off bread?
No. Mould threads can spread invisibly through the whole loaf. Throw out the entire loaf, even if you can only see one small spot.
What is the best way to thaw bread?
Slices go straight into the toaster from frozen. Thaw a whole loaf in its bag at room temperature and crisp it briefly in the oven, or bake it from frozen at about 180 °C (350 °F) for around 20 minutes.
Can you freeze bread rolls?
Yes, just like bread: fresh, airtight, for up to about 3 months. Crisp them briefly in the oven from frozen.
All figures are guidelines for food that is stored correctly and kept chilled. No guarantee: when in doubt, throw it out. Take extra care during pregnancy and with young children, older or vulnerable people.
